Hass Avocado Vegan Burritos

Ingredients:

For the filling:

  • 2 large ripe Hass avocados, peeled and pitted
  • 1 cup cooked black beans (canned, drained and rinsed)
  • 1 cup cooked brown rice or quinoa
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers (any color)
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste

For assembly:

  • Large tortillas or burrito wraps
  • Sliced lettuce or spinach leaves
  • Sliced red cabbage (optional, for added crunch)
  • Fresh cilantro leaves
  • Lime wedges

Instructions:

  1. In a large skillet, heat the olive oil over medium heat. Add the diced red onion and minced garlic, sauté until translucent.
  2. Add the diced bell peppers and corn kernels to the skillet. Cook for about 5 minutes until they soften.
  3. Mash the ripe Hass avocados in a bowl using a fork until creamy but still slightly chunky.
  4. Add the mashed avocado, cooked brown rice or quinoa, black beans, ground cumin, chili powder, paprika, salt, and pepper to the skillet. Stir well to combine all the ingredients. Cook for an additional 3-5 minutes to let the flavors meld.
  5. Warm the tortillas in a separate pan or microwave, so they become pliable and easier to fold.
  6. Place a generous amount of the avocado and vegetable filling mixture in the center of each tortilla.
  7. Add some sliced lettuce or spinach leaves on top of the filling for added freshness.
  8. If desired, add some sliced red cabbage for extra crunch and color.
  9. Sprinkle fresh cilantro leaves over the filling for a burst of flavor.
  10. Squeeze a dash of lime juice over the filling for a zesty twist.
  11. To fold the burrito, fold in the sides and then roll it up tightly from the bottom to enclose the filling completely.
  12. Serve immediately, or you can also wrap the burritos in foil and keep them warm in the oven until serving.
