Ingredients:
- 2 slices of bread.
- 1 small ripe avocado.
- salt.
- 1/2 cup grape tomatoes.
- 1/2 cup balsamic vinegar.
- 1 Tablespoon fresh parsley (chopped).
Method:

Make balsamic reduction: Add balsamic to a small pot on medium heat. Whisk consistently until reduced in half.

Toast bread. Spoon 1/4 avocado onto the bread and spread evenly.

Top with tomatoes, and parsley, and drizzle with balsamic reduction.
